Simple Mills does it again!
I have enjoyed all of Simple Mills gluten free products and this one is no different! I like that they use almond flour as I think this is a very healthy gluten free alternative to flour. It is a little pricey but you can occasionally find it on sale. I always bake it following the directions and get excellent results. It does not taste like a perfect match for a normal cupcake, but I find the batter to be light and fluffy (especially compared to other gluten free cupcakes). I have also experimented with flavors by adding coconut flakes etc! I do not eat many gluten free baked goods cause I think they just dont taste good- but these along with other Simple Mills products changed my mind!

Pretty good!
We actually use this and the chocolate frosting to make what we call “cookie pudding.” It tastes just like fresh baked chocolate chip cookies. For being compliant on my diet (which is extremely limited) this stuff is pretty good!
