great pasta!
a little less than 1 cup of flour, 1 egg, 1 or 2 teaspoons of water, 1 teaspoon of EVOO and a dash of salt plus lots of elbow grease = a great ball of dough to feed into your pasta machine. Very pleased with this product but you may need to alter your mix of water if you are used to american flour. We like that it's italian flour so we expect fewer chemicals and less genetically modified stuff. We will stick with this product for our homemade pasta even though it is a few dollars more. (PS: Make sure you work it for at least fifteen minutes before cutting it into noodles.)

Helps make better noodles
Fineness of the flour helps make smooth dough faster but due to expense, i would mix this 50/50 with regular flour (same results).It really takes alot of work to hand kneed dough but it keeps for a few days and the pasta really is good.I recommend home made pasta with a delicate sauce or white sauce with some flavor.Don't sit on your phone all night, get up and make some noodles!

The only flour for making pasta!
This makes tender gnocchi and other pasta like you get in Italy… AP was not made for making pasta… this was recommended by a very famous chef who is a friend . He was right. Wow. What a difference!

Product itself is fine. Amazon was not great about shipping.
Honestly- bag arrived simply double-bagged. No box- no protection.So the outside bag I opened fine- then the flour itself was tightly (TIGHTLY) wrapped in another plastic bag- which I could see was full of loose flour. Somewhere along the line- someone punted the package or just tossed it or looked at it funny or said some harsh words near it. The paper sack the flour itself was in was busted open at two corners and long the bottom seam. Worse- the inner bag has some sort of "scent" to it.(I can't describe it other than it reminded me of the scented trashbin liners) So that smell permeated all the flour- which- obviously went to the garbage.No refunds on this product from Amazon.Live and learn.Waste of money.The flour itself- when you get it fresh and intact- is fantastic and makes superior pasta.Don't bother buying it from Amazon, however. Period.
