It isn't clear. Is there some type of temperature control so it doesn't overheat if left on for long periods?

Once desired temperature is reached, it will automatically restart it's heating cycle to maintain control of temperature.

can you change out the drip pans under the burners?

Hello, Thank you for the question, the drip pans are not removable. Hope this helps!

Does it have a auto shut off feature?

No auto shut off feature; however, when it reaches the temperature deleted, the light does turn off.

Can I use this with a pressure canner and what is the largest canner I can use on this unit?

Hello, This electric burner cycles on and off and features 1000W of heat. Due to these functions, it is not recommended to be used for canning. Supersaver
