Beautiful pan and cooks very evenly and clean-up is a breeze. Great size and depth. Worth every penny.

Best pan I have ever bought-- bar none.
I am 85 years old now, and over the years I have bought about 100 pots and pans. During the last 10 years I purchased over a dozen so-called "Non-Stick" pans some of which were advertised on TV. Within a few months to 1 year all of these Non-Stick Pans purchases were burned & stained heavily with grease and were no longer Non-Stick at all. I have disposed of about 11 of them. I only kept one for toasting one side of a bagel- it is good for little else. I eventually came to the conclusion that non-stick pans were far from perfected.Then in browsing through pots & pans (in Amazon) I came upon one 12inch pan that was written to be made of "granite stone" whatever that meant. Now, the word "granite" struck me, since I have a Brazilian granite kitchen Countertop that even after 15 years of daily use, it still looks like the day it was delivered-- perfectly smooth, glistening and unbreakable. My other definite memory of granite relates to a trip, I had made as a visiting professor to The University Hospital of Padua, Italy, some 30+ years ago. At this Hospital the Head of The Hospital, took me on a tour to experience many interesting exhibits of ancient wonders, since this Hospital was founded some 400 years ago, around the time of Leonardo Da Vinci. Leonardo was the most important figure to herald in "The Renaissance". He was one of the first to perform autopsies, in order to learn human anatomy, for his works of art that included the human figure. Anyway, the Head Doctor of Padua Hospital took me to a room which he explained to me, was the very first autopsy table, which was made of granite, and was over 400 years old. He also explained to me that Padua Hospital, was the home of the first autopsies, ever performed in modern Western Civilization. I was amazed by the fact that The table was still absolutely pristine in terms of its appearance of the granite slab, even though several thousand autopsies were performed on this historic table.For the above reasons I decided to take my chances one more time on a "Non-Stick Pan" despite my many prior disappointments. I received this pan about 3 months ago, and have used it many times since, to make recipes such as: Sicilian Pasta Tomato Sauce (2-3 hours of cooking time); Pork Chops cooked in 50/50 Milk & Cream Bologonaise style (2 hours); Wor Wonton Soups (Cantonese Style); Sirloin & Rib-Eye Steaks, perfectly braised & fried; and 3 inch high omelettes that slide right out of the pan after using only 1 to 2 tablespoons of olive and/or avocado oil. The pan still looks completely like the day I took it out of its box. I also love the 12 inch beautifully made glass cover. It also displays a long, pretty pan handle on one side, and a much shorter handle on the opposite side, that lets you easily pick up or turn the pan without need for gloves. I also love the two side spout-like bends in the pot with which to enable you to pour out its remaining contents more easily without spillage. Also impressive is its 5.5 quart size excellent for making sauces and soups and the nice height of the pan, preventing splatter.Yes, I truly and wholeheartedly recommend buying this pan with a few words of caution related to the following: when I read a small minority of the buyer reviews, I was concerned by the fact that several of these purchasers were most unhappy with the burning of the granite even with some flaking described of the granite-stone lining itself. The question I asked myself-- why did I not corroborate these nasty findings. This did not happen, for example when I cooked using high heat to sear & cook several steaks in 1-2 tbl. of oil. I have come up with a probable explanation. Even though it is described as granite-stone I do not believe it is the actual Granite Stone of which our kitchen countertops are made of, but probably, a composite of granite chips pressed together using many tons of pressure when manufacturing the pan (refer to Non-Stick Pan Manufacturing Processes on "You Tube" to understand this better). If this supposition is correct, then it is likely, that this pan's granite material has a certain heat tolerance beyond which it may actually burn and breakdown. Recently my 20 year old electric stove-top broke down by getting extremely hot and even burned perfectly good stainless steel pots. A few weeks before I bought the above pan, I purchased (from Amazon again) a new electric stove-top that shuts off if a heat- element, if it gets too hot after removing the old stove-top The new electric stove top is definitely superior to the old one I got rid, which likely goes back to past times when such top were in their early infancy to childhood phases of development. Many years later many improvements must have been made. So for those of you that had this pan burn and flake on you-- you should consider that perhaps your stove top is getting to 600 to 700 (too hot) or more degrees, rather that a much safer 500 degrees and below.I sincerely hope that your stove top is compatible with this pan, should you decide to purchase it, based upon this review.

Large, non-stick that literally doesn't stick
I could not be happier with this pan! I scrambled 8 eggs with plenty of room to maneuver without any spill over, and the residue just rinsed off with a spray of water, wow! I did use a little bit of butter, but other pans I've used would have stuck on egg residue and this one definitely did not. It has the capacity to brown 2 lb of meat along with a couple of onions with plenty of room to spare. Great pan to cook full meals for my family of four, including two growth-spurting pre-teens. We have an electric stove with glass cooktop and have had no issues with this pan.Stop looking and buy it :)-----I put in an update to this review that was not posted, not sure why. Recap, I had used this pan daily for maybe a month before the non-stick coating was chipped and started rusting underneath that spot. It was small but I knew it wasn't going to get any better from there, and I was able to return it to Amazon.---Well, in part 3 of the pan saga, I have been on the hunt for a similarly awesome pan since returning this one. Found a very similar one by another brand that seems a bit heavier and may be more sturdy, but too small. This pan is the one to which all others are now compared- I didn't know the extra inch of width and the higher sides were missing until I tried them, but they mean the difference between a great pan sauce soaking into al dente pasta as it thickens... and having food flinging about the stove as you're trying to hustle up a weeknight meal in the chaos that is life.As I have not been able to find one as big, I'm at the point of ordering a second one of these in hopes there's more longevity with it, because I really, really want to love this pan 4life.

Incredible skillet. Great depth. Nonstick material works very well. And Carote customer service is excellent. They are prompt with resolving all issues.
